i must admit that i had grand plans for today – a leprechaun breakfast, a treasure hunt for a pot of gold & an entire green dinner, among other things. then i procrastinated and these first couple weeks of march went by way too quickly & i woke up this morning and completely forgot it was even st. patty’s until someone reminded me! oops!

i mentioned yesterday that we went to a christmas party over the weekend that was polar express themed. the little man was given the above ticket and bell at the party and i have carefully tucked each of them away for different reasons.

each year since ti guy was born we have purchased a christmas ornament for him & i have tried to make sure they have some sort of meaning. this year i was planning on picking one up during our time in utah, but then he received this bell from his first ever visit with santa at the party and i knew it would be the perfect keepsake ornament for him this year. now every time i see this ornament i’ll remember him looking at santa in absolute awe and ever so reverently whispering “santa!”.

the ticket i have slid onto my inspiration board because i love a the scripture that is printed on the back of it, here is what is one the back of the ticket:

the word “believe” has always held such magic and power to me. so naturally i loved the theme of the ticket and that scripture. such a good reminder for this time of year. another good reminder is this song i’m going to leave you with. it’s josh groban singing “believe” which one of my all time favorite christmas songs ever. enjoy! 

“i die” pear salad

last night we had went to our church christmas party and had a very fun time. it was themed after polar express and it was all around a great night, even with the fire alarm going off at the beginning! apparently fog machines will set a fire alarm off! who knew! of course, ti guy loved seeing the fire truck pull up! he couldn’t stop talking about the fog machine and the fire truck the rest of the night!!!

after everything settled down we got to eat lots of yummy soup, salad & freshly made rolls while sipping hot chocolate and listening to the story of the polar express be read. one of my favorite parts of the night was probably watching the little man run around in his new christmas jam jam’s (pajama’s) as all the kids were told they could dress in pj’s. a totally brilliant idea on someone’s part because that meant after the party all the kids were 100% ready to be tucked into bed! brilliant i tell ya! 

..and my all time favorite part of the night? my favorite part was how excited titan got to see santa. yes, santa was at our christmas party and the little man was mesmerized. when santa walked in he could barely contain his excitement and he was adamant that he must meet santa. after waiting our turn i sort of expected ti to freak out or change his mind about santa’s coolness, but no. ti was absolutely in awe. he got really quiet and his eyes got really big as santa handed him a bell and then he let out a very quiet, very reverent “santa!”, like he honestly could not believe the big man himself was standing in front of him. cutest. thing. ever! 

of course, now for the main reason of this post. you’re probably wondering at this point what all this has to do with pear salad?! well, i volunteered to provide a salad for the party and decided to make the following salad i had read about over at gerberdays. let me just say, this salad is incredible! everyone who tried it was asking me for the recipe and it was definitely a hit all the way around. i’m not normally a fan of my veggies & fruit together, but this salad totally changed my mind! i guarantee anywhere you take this salad this holiday season it will be a success! it is literally that good! i’m am for sure adding this to my list of “go to party foods”. enjoy!

“i die” pear salad

dressing:

1 tsp poppy seeds
1/2 cup red wine vinegar
3/4 cup canola oil
1 cup sugar
1 tsp salt
1 tsp ground mustard
1/2 small red onion, chopped

blend in the blender until smooth.

salad:

3 large heads of lettuce: red leaf, green leaf, and romaine.
(*really you can use any lettuce. i used one green leaf and one romaine 
and that was plenty for 8-10 people*)
3 ripe pears
1 pkg craisins
bleu cheese

sugared almonds:

1 cup sliced or chopped almonds
1/4 cup butter
1/2 cup sugar

add together in pan. stir on med heat until brown* (watch carefully)…
pour over parchment paper until cool. 

* side note here: i actually way over cooked my first batched and had to make another, so you will for sure want to take these off the stove as soon as they all are a golden brown. otherwise you’ll end up with stuff that will break your teeth! 
toss everything together, but leave some of the craisinsbleu cheese and almonds to sprinkle on top for presentation & ta da! you’re done! 

* quick tip: wait until the last minute to assemble everything! *
the finished product! i’m telling you, there is a reason i retitled it “i die” salad. so ridiculously good!
